Abstract

Eastern Kopi ™ merupakan sebuah restoran keluarga yang merupakan anak perusahaan Eastern Group. Restoran ini menyajikan berbagai sajian kuliner khas Asia Tenggara seperti masakan China, Thailand, Malaysia, Singapura dan Indonesia. Berdasarkan hasil observasi dan wawancara yang telah dilakukan oleh penulis, dalam menjalankan operasional restoran sehari-hari masih terdapat permasalahan/hambatan yang mengganggu kelancaran kinerja restoran. Project improvement ini bertujuan untuk mengidentifikasi serta menyarankan solusi terhadap masalah prioritas yang telah ditentukan. Masalah prioritas yang ditemukan pada Eastern Kopi ™ Flavor Bliss Alam Sutera adalah pelayanan yang masih perlu ditingkatkan. Dalam mengumpulkan data, penulis menggunakan metode gabungan kualitatif dan kuantitatif (mixed methods), khususnya wawancara, observasi, dan kepustakaan. Kemudian, data tersebut akan diolah menggunakan pendekatan Define, Measure, Analyze, Improve, dan Control (DMAIC). Melalui kegiatan Project Improvement ini, diharapkan rating Eastern Kopi ™ pada platform Google dapat meningkat pada rating bintang 4.6.
