Analisa dan Solusi atas Permasalahan Procurement pada Perusahaan Jasa Kuliner (Studi Kasus: PT Paviliun Pancanari)

Process of project case improvement starting from problem identification until provide alternative solutions to the restaurant Vietopia esprcially on procurement division. The purpose of the project case improvement this time is to make sure only items that belonged to the goods COGS (cost of goods sold) are counted in the calculation of cost of goods sold and goods that are out to use a product that is sold. Of the eight issues listed in the procurement division, elected one problem is the calculation of cost of goods sold per month is not valid. To find the root of the problem, the author uses the theory of fishbone diagrams, interrelationship digraph, and the interrelation digraph matrix. After analysis, it was found that the root cause of the problem is the lack of standard operating procedures. Thus, the focus of this project is how to make a good system so that all activities are conducted in accordance with existing procedures. Through the creation of a good system to facilitate the work and reduce errors. Theory approach is used to provide an alternative solution to the problem is the flowchart, bin cards, and inventory valuation methods. Ultimately elected the best alternative solution is to create a system of its own in the procurement division. Results of the application of the best alternative solution can reduce the cost of goods sold of approximately two percent. If the plan one year ahead could be done properly can provide many benefits to the procurement division.
