Abstract

Hotel merupakan salah satu hospitality business yang sedang mengalami perkembangan sangat pesat sejak pandemi di Indonesia telah berakhir. Namun, dalam kegiatan operasional hotel sehari-hari pasti terdapat beberapa masalah yang menghambat hotel tersebut. Penelitian ini bertujuan untuk menanggulangi salah satu masalah di hotel yaitu terkait dengan food waste management. Adapun hotel yang menjadi objek dalam penelitian ini adalah The Apurva Kempinski Bali. Metodologi yang dipakai dalam mengumpulkan informasi terkait dengan masalah food waste di The Apurva Kempinski Bali adalah penelitian kualitatif yaitu wawancara, observasi lapangan, dan juga studi kasus. Dengan memahami setiap akar masalah dari food waste yang terjadi, itu akan membuka peluang untuk melakukan perbaikan untuk mengatasi masalah tersebut dan juga mencegah adanya dampak-dampak jangka panjang lebih lanjut.
